Simmered Arctic Char with Dill Sauce Recipe

Serves/Makes: 4 servings

Ingredients:

  • 4 fresh Norwegian Arctic Char steaks or fillets (about 6 to 8 ounces each)
  • 1 teaspoon salt
  • 1 medium onion, sliced
  • 1 1/2 cups water
  • 1 cube or 1 teaspoon chicken bouillon
  • 1 tablespoon lemon juice
  • Dill Sauce, to serve (recipe follows)
How to cook Simmered Arctic Char with Dill Sauce:
  • In a large skillet, large enough to hold fish in a single layer, combine salt, onion, chicken bouillon, water, and lemon juice. Heat to boiling.
  • Add char steaks, simmer tightly covered, for 10 minutes or until fish flakes easily.
  • Remove simmered char to platter; pour Dill Sauce over char and serve.

Dill Sauce Recipe

Dill Sauce Ingredients:
  • 2 tablespoons butter
  • 1 tablespoon finely chopped onion
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1 teaspoon dill weed
  • 1/8 teaspoon pepper
  • 1 1/2 cups milk
How to cook Dill Sauce:
  • In a small saucepan, cook onion in butter until tender; stir in flour, salt, dill weed, and pepper.
  • Add milk, mixing well.
  • Heat until mixture boils and thickens, stirring constantly.
