South African Fish Kabobs Recipe

Ingredients:

  • 2 pounds firm white fish, cubed
  • 1 medium onion, sliced
  • Juice from 1 lemon
  • 2 teaspoons red wine vinegar
  • 3 tablespoons olive oil
  • 1/2 teaspoon thyme
  • 1/2 teaspoon basil
  • 1/2 teaspoon rosemary
  • Salt and pepper to taste
  • 6 medium bay leaves
  • 6 medium cherry tomatoes
  • 12 small mushroom caps
How to cook:
  • Combine all ingredients, except tomatoes and mushroom caps in a large bowl, marinate for 30 minutes.
  • Thread fish, tomatoes and mushrooms on to skewers, grill for 10 minutes in broiler or over hot coals.

Tip:

Always soak bamboo skewers in cold water for 30 minutes, before using, to prevent them from burning on the grill.
