Swimming Shellfish Recipe
Serves/Makes: 4
Ingredients:
- 1/2 pound (227 g) shrimps
- 1/2 pound (227 g) thawed scallops
- 1 tablespoon (15 mL) butter
- 1/2 pound (227 g) fresh mushrooms, cleaned and quartered
- 1 tablespoon (15 mL) chopped shallot
- 1 teaspoon (5 mL) mixed herbs
- Juice of 1/4 a lemon
- 1 1/2 cups (375 mL) dry white wine
- 1 cup (250 mL) water
- Salt and pepper
- 2 teaspoons (10 mL) cornstarch
- 1 tablespoon (15 mL) cold water
- Lemon juice
- Melt butter into a deep fry pan mix in scallops, shrimps, mushrooms, shallot, mixed herbs, lemon juice, dry white wine and water salt and pepper, to taste.
- Bring to a boil simmer for 2 minutes and remove from heat.
- Set aside for 3 minutes.
- Remove scallops, shrimps and mushrooms from fry pan reserve.
- Transfer fry pan over high heat.
- Bring liquid to a boil.
- Reduce liquid to 1 1/2 cups (375 mL).
- Whip in cornstarch, already mixed into cold water, until well blended.
- Remove fry pan from heat.
- Stir in reserved scallops, shrimps and mushrooms.
- Salt and pepper, to taste.
- Serve, sprinkled with a little lemon juice.
