Thai Fish Cakes Recipe

Ingredients:

  • 1 pound cod fillets
  • 4 kaffir lime leaves, finely shredded
  • 1 tablespoon fresh Thai basil, chopped
  • 2 tablespoons red curry paste
  • 3 ounces green beans, very finely chopped
  • Oil for frying
How to cook Thai Fish Cakes:
  • Place cod fillets in the food processor and process for 20 seconds or till smooth.
  • Add lime leaves, Thai basil and curry paste and process for 10 seconds.
  • Transfer fish mixture to a large bowl, adding green beans and spring onion, mix well.
  • Using wet hands, form 2 rounded tablespoons of the mixture at a time into flattish patties.
  • Heat oil in pan over medium heat.
  • Fry 4 fish cakes at a time till they are golden brown on both sides.
  • Drain on paper towers and serve immediately with Dipping Sauce (see below).
Dipping Sauce Ingredients:
  • 1 cucumber (finely chopped)
  • 3 tablespoons sweet chili sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon unsalted roasted peanuts, chopped
  • 1 tablespoon fresh coriander, chopped
How to cook Dipping Sauce:
    Combine all ingredients in a bowl and mix well.

The Thai name for Fish Cakes recipe is Tod Man Pla.
