Trout - Cajun Cuisine Recipe

Ingredients:

  • 1 1/2 teaspoons (7.5 mL) paprika
  • 3/4 teaspoon (3.75 mL) pepper
  • 1/2 teaspoon (2.5 mL) salt
  • 1/2 teaspoon (2.5 mL) oregano
  • 1/2 teaspoon (2.5 mL) chili powder
  • 1/2 teaspoon (2.5 mL) dry mustard
  • 1 green onion, chopped
  • 1/4 teaspoon (1 mL) thyme
  • Pinch Cayenne pepper
  • 1 pound (454 g) trout fillets (1/4-inch / 1-cm thick)
  • 2 teaspoons (10 mL) vegetable oil
  • 2 teaspoons (10 mL) freshly chopped parsley
  • Lemon wedges
How to cook:
  • Into a small bowl, mix together paprika, pepper, salt, oregano, chili powder, dry mustard, chopped green onion, thyme and Cayenne pepper; set aside.
  • Wipe dry trout fillets using paper toweling; lightly brush fillets with vegetable oil on both sides.
  • Arrange fillets onto a baking sheet, skin side down.
  • Sprinkle paprika mixture all over fillets.
  • Broil, 4 to 6 inches (10 to 15 cm) from heat, for 4 to 5 minutes, until flesh can easily be broken-up with a fork.
  • Serve, along with lemon wedges.
