Trout in Individual Dishes Recipe
Serves/Makes: 2 - 3
Ingredients:
- 2 to 3 small trouts, fresh or frozen
- 1 tablespoon (15 mL) butter
- 2 tablespoons (30 mL) vegetable oil
- 1/2 teaspoon (2.5 mL) curry powder
- 1/4 cup (60 mL) all-purpose flour
- 1 to 2 tablespoons (15 to 30 mL) butter
- Grated rind of 1 lemon
- Salt and pepper, to taste
- Crusty bread
- Flour trouts.
- In a glass or ceramic 9-inch (23-cm) pie plate, melt 1 tablespoon (15 mL) butter for 1 minute, on 'MAXIMUM'.
- Pour in vegetable oil mix in curry powder and microwave for 1 minute, on 'MAXIMUM'.
- Coat trouts with mixture.
- Microwave trouts on 'MAXIMUM' for 5 minutes turn trouts and leave to rest for 5 minutes.
- Leave trouts to cool until trouts are cooled enough to be handled delicately remove skin, spine and bones.
- Arrange trouts into a dish.
- With a fork, break-up trouts into small pieces evenly fill 2 individual dishes with trout flesh.
- Add remaining 1 to 2 tablespoons (15 to 30 mL) butter and lemon rind to pie plate.
- Microwave butter mixture for 40 seconds, on 'MAXIMUM'.
- Evenly pour butter over trout, into each individual dish.
- Cover dishes refrigerate for at least 6 hours, before serving.
- Serve with crusty bread, for each guest to spread with trout mixture, to taste.
