Tunisian Spicy Catfish and Tomato Stew Recipe
Serves/Makes: 3 - 4
Ingredients:
- 1 pound catfish fillets, cut into large chunks
- 2 1/2 cups pulped tomato
- Harissa to taste, start with 1/2 teaspoon
- Large handful chopped coriander leaves or parsley
- Put the pulped tomato, harissa and herbs into a pan, bring to the boil.
- Remove from the heat and add the catfish chunks.
- Simmer for about 5 minutes until the fish is cooked through.
- Taste and adjust the seasoning.
- Serve the Tunisian Catfish Tomato Stew with some boiled potatoes and fresh vegetables.
