Vietnamese Peppered Calamari Recipe

Vietnamese Peppered Calamari recipe Serves/Makes: 4

Ingredients:

  • 1 pound squid (calamari), cleaned and cut
  • 3 tablespoons flour
  • 1 teaspoon chili powder
  • 1-2 red chillies, chopped finely (or to taste)
  • 2 cloves garlic, mashed
  • 1/2 cup rice vinegar
  • 1/2 cup brown sugar
  • 2 tablespoons fish sauce
  • Salt to taste
How to cook Vietnamese Peppered Calamari:
  • To prepare sauce mix the chillies, garlic, vinegar, sugar and fish sauce and bring to the boil.
  • Cook until all sugar has dissolved and the fluid becomes syrup. Puree this sauce.
  • Mix the flour with the chili powder and salt to taste and coat the squid with this mixture.
  • Deep-fry the squid two minutes and serve with the chili sauce.
