Vietnamese Squid Salad Recipe

Vietnamese Squid Salad recipe Serves/Makes: 4

Ingredients:

  • 3/4 pound squid, cleaned and cut
  • Juice of 2 lemons
  • 1 tablespoon sambal oelek*
  • 2 cloves garlic, in very thin slices
  • 3 ounces olive oil
  • 3/4 pound lettuce (optional)
  • Bunch of green onions, chopped
  • 1 cucumber, peeled and cut
  • 2 tomatoes, cut
  • 10 olives
  • Pepper and salt to taste
  • Mint or basil leaves and lemon wedges to garnish
How to cook Vietnamese Squid Salad:
  • Mix 1 ounce olive oil with the sambal oelek, garlic and juice of 1 lemon and marinate the squid in this mixture for two hours.
  • Heat a frying or grill pan and fry the squid on high heat for maximally two minutes; allow to cool down.
  • Put the lettuce (if using) in a salad bowl, followed by the cucumber, the tomatoes, the green onions and the olives.
  • Put the fried squid on top.
  • Mix the remaining olive oil with the remaining lemon juice (and pepper and salt) and pour over the squid salad. Garnish with mint or basil leaves and lemon wedges.
