Easy Simmered Mahi-Mahi Fillets Recipe
Serves/Makes: 2
Ingredients:
- 2 mahi-mahi fillets (6-8 ounces each)
- 1/2 cup Italian or light Italian dressing
- 1 small green pepper, cut into strips
- 1 small onion, thinly sliced
- 1 medium tomato, chopped
How to cook:
- In large skillet, heat dressing and cook green pepper and onion till tender.
- Add fish and tomato.
- Cover and simmer about 10 minutes or until fish is flaky.
- Serve over hot rice.
