Flambeed Shrimps Recipe
Serves/Makes: 4
Ingredients:
- 20 shrimp tails
- 1 tablespoon (15 mL) vegetable oil
- 2 tablespoons (30 mL) butter
- 1/2 pound (227 g) fresh mushrooms, cleaned and diced
- 1/4 cup (60 mL) Cognac
- 1 cup (250 mL) plain yogurt
- 1 tablespoon (15 mL) freshly chopped parsley
- Few drops lemon juice
- Pinch of paprika
- Salt and pepper, to taste
- Lemon segments, to decorate
How to cook:
- Into a fry pan, heat together vegetable oil and half of butter.
- Add shrimp tails, generously salt and pepper.
- Fry for 2 to 3 minutes, over high heat, stirring once.
- Remove shrimp tails from fry pan reserve.
- Add remaining butter to fry pan.
- Add mushroom dices salt and pepper.
- Cook for 3 minutes, over medium-high heat.
- Pour in Cognac flambe and then cook for 2 minutes more.
- Mix well.
- Stir in yogurt, chopped parsley, lemon juice and paprika.
- Cook for 2 to 3 minutes more, at medium heat.
- Arrange shrimp tails back in sauce simmer for 1 to 2 minutes.
- Serve, decorated with lemon segments.
