Grated Oysters in Shells Recipe
Serves/Makes: 2
Ingredients:
- 8 fresh oysters (in shells)
- Pickling salt
- 3 tablespoons (45 mL) dry white wine
- 1 tablespoon (15 mL) butter
- 1 tablespoon (15 mL) flour
- 1 cup (250 mL) boiled fresh spinach, drained, grossly chopped and seasoned with salt and pepper
- 3 tablespoons (45 mL) fine breadcrumbs
- 2 tablespoons (30 mL) grated Gruyere cheese
- Pinch of nutmeg
How to cook:
- Open-up oyster shells remove oysters from shells, reserving oysters, juice and half of shells, into a small saucepan.
- Spread some pickling salt onto a baking sheet.
- Clean and wipe dry deep half of shells, arrange onto pickling salt and reserve.
- Pour dry white wine into saucepan, over oysters slowly poach oysters for 1 to 2 minutes, over medium-high heat.
- Remove oyster from cooking liquid reserve both, oysters and cooking liquid, separately.
- Prepare white sauce.
- Preheat oven broiler.
- Evenly cover the bottom of each reserved half shells with cooked spinach top with 1 oyster.
- Coat spinach with white sauce evenly sprinkle with breadcrumbs and cheese.
- Broil in oven until golden brown.
- Sprinkle with nutmeg.
- Serve, hot.
White Sauce Ingredients:
- 1 tablespoon (15 mL) butter
- 1 tablespoon (15 mL) flour
- 1 cup (250 mL) milk
- Strained reserved cooking liquid
- A little salt
- Nutmeg, to taste
White Sauce Preparation:
- In a small saucepan, melt butter stir in flour.
- Pour in milk, cooking liquid, a little salt and nutmeg.
- Simmer over low heat, until thickened.
