Marinated Fresh Salmon Recipe
Serves/Makes: 6
Ingredients:
- 1 pound (454 g) fresh salmon fillets
- 1 tablespoon (15 mL) freshly chopped dill
- 1 teaspoon (5 mL) salt
- 1 teaspoon (5 g) sugar
- Juice of 2 lemons
- 1 teaspoon (5 mL) freshly ground pepper
- 1/2 cup (125 mL) sunflower oil
- 1 teaspoon (5 mL) chopped capers
- 1 teaspoon (5 mL) prepared horseradish
- 1 tablespoon (15 mL) cream (15%)
Garnishes - 6 lettuce leaves
- 12 whole chives
- 6 cherry tomatoes
- 6 slices pumpernickel bread
- 6 lemon halves
How to cook:
- In a bowl, coat salmon fillets with dill, salt, sugar, lemon juice, pepper and sunflower oil.
- Marinate salmon for 3 days, refrigerated, turning salmon fillets every 12 hours.
- Remove salmon fillets from marinade finely chop salmon.
- Transfer chopped salmon into a clean bowl.
- Mix in capers, horseradish and cream.
- Arrange lettuce leaves in the center of individual plates.
- Evenly spoon salmon mixture in the center of lettuce leaves.
- Garnish plates with chives, cherry tomatoes, pumpernickel bread slices and lemon halves.
- Serve immediately.
