Oysters Taranto Style Recipe

Serves/Makes: 4

Ingredients:

• 24 very fresh oysters
• Salt
• 3 tablespoons chopped parsley
• 3 tablespoons fine breadcrumbs
• Freshly ground black pepper
• Olive oil
• 2 lemons

How to cook Oysters Taranto Style:

• Open the oysters with a oyster knife; rinse the half shells containing the oysters in cold, salted water; drain and then cover the bottom of a large ovenproof pan (or two) with a single layer of them.
• Sprinkle plenty of parsley, breadcrumbs, and freshly ground pepper on each oyster on its half shell.
• Drizzle a little olive oil over them and cook in a preheated oven at 325 degrees for 1/4 hour.
• Serve hot, with lemon wedges.
