Seafood Mix and Llinguica Soup Recipe

Serves/Makes: 4

Ingredients:

• 3 ounces Portuguese sausage (Linguica)
• 12 clams
• 12 shrimp
• 12 scallops
• 12 mussels
• Broth
• Medium potato
• 1 medium onion, cubed
• 1 hot cherry pepper (pastene)
• 1 1/4 cups brown ale*
• 1 Tablespoon red bell pepper
• 1 Tablespoon parsley
• 2 cups water
• Salt and pepper to taste

How to cook:

• Place potato, onion, sausage, cherry pepper, water, and ale in pan.
• Simmer until potato is tender. Add clams, cover, and cook until clams open.
• Remove from heat, remove clams, strain broth, and hold.
• Grill scallops and shrimp over high heat until just cooked. Steam mussels (or grill, covered) until open.
• Finely dice red bell pepper and snip parsley.
• Arrange scallops, shrimp, mussels, and clams in bowl garnish.
• Pour over hot broth at table side and enjoy.
