Simmered Monkfish with Tomato-Basil Sauce Recipe
Serves/Makes: 4
Ingredients:
- 1 pound monkfish fillets, pan-ready (cut into 1 x 2 inch pieces and about 1 inch thick)
- 1 pound pasta
- 2 tablespoons olive oil
- 1 cup onion, chopped
- 1 teaspoon garlic, fresh, minced
- 4 cups tomatoes, seeded and chopped
- 1 teaspoon dried basil
- 1/3 cup red wine
- 1/4 cup fresh basil leaves, minced
- 1/4 teaspoon ground pepper
- 1/2 teaspoon salt
How to cook:
- In a large skillet, saute onions and garlic in olive oil.
- Stir in tomatoes, dried basil, salt and pepper and simmer for 15 minutes.
- Stir in monkfish and wine, and simmer for 3 minutes or until monkfish flakes easily when tested with a fork.
- Add fresh basil to sauce and serve over hot pasta.
