
Baked Salmon with Sauteed Red Potatoes Recipe
Serves/Makes: 4
Ingredients:
- 1 salmon fillet (about 1 pound)
- 1 tablespoon butter, melted
- 1 tablespoon prepared horseradish, drained
- 2 teaspoons lemon juice
- 1/4 teaspoon garlic powder
- 1/8 teaspoon pepper
- Sauteed Red Potatoes, to serve (see the recipe below)
How to cook Baked Salmon with Sauteed Red Potatoes:
- Place salmon fillet skin side down in an 11×7-inch baking dish coated with cooking spray.
- In a small bowl, combine the butter, horseradish, lemon juice, garlic powder and pepper; spread over salmon.
- Bake, uncovered, at 375°F (190°C) for 20-25 minutes or until fish flakes easily with a fork.
- Serve the Baked Salmon with Sauteed Red Potatoes.
Sauteed Red Potatoes Ingredients:
- 4 medium red potatoes, cut into 1/2-inch cubes
- 1 medium onion, thinly sliced
- 1 jalapeno pepper (or to taste), seeded and chopped
- 1/4 teaspoon salt-free seasoning blend
- 1/4 teaspoon pepper
- 1 tablespoon canola oil
- 2 small tomatoes, chopped
How to cook Sauteed Red Potatoes:
- In a large nonstick skillet coated with cooking spray.
- Saute the potatoes, onion, jalapenos, seasoning blend and pepper in oil for 30-35 minutes or until potatoes are tender.
- Stir in tomatoes; heat through.
