
Cajun Shrimps in Seafood Broth Recipe
Serves/Makes: 4
Ingredients:
- 1 pound (454 g) fresh shrimps (with heads)
- 1 teaspoon (5 mL) rosemary
- 1 teaspoon (5 mL) thyme
- 1 teaspoon (5 mL) freshly chopped basil
- 1 teaspoon (5 mL) Cayenne pepper
- 1 teaspoon (5 mL) crushed chilies
- 1 teaspoon (5 mL) white pepper
- 1/2 can beer
- 1 tablespoon (15 mL) Worcestershire sauce
- 1/4 pound (113 g) butter
- 1 cup (250 mL) seafood broth (below)
How to cook Cajun Shrimps in Seafood Broth:
- Remove heads from shrimps, reserving heads for broth.
- Mix together rosemary, thyme, basil, Cayenne pepper, crushed chilies and white pepper.
- Into a frypan, melt 3/4 of the butter.
- Stir in shrimps, mixed seasonings and seafood broth.
- Fry shrimps over high heat for 2 minutes, stirring.
- Stir in beer and Worcestershire sauce cook for 2 minutes more, stirring, over high heat.
- Add remaining butter slowly stir mixture for 1 minute.
Seafood Broth Ingredients:
- Reserved shrimp heads
- Approximately 7 cups (1.75 L) water
- 1 bunch green onions
- 2 stalks celery
- Pinch of salt
- Pepper, to taste
How to cook Seafood Broth:
- Pour water into a large casserole.
- Mix in reserved shrimp heads, green onions, celery stalks celery, salt and pepper.
- Bring to a boil simmer for 1 to 4 hours.
- If mixture simmers for a long time, you may want to add some water.
Note:
Serve really hot, over boiled rice or with a French crusty bread.
