
Clams wih Parmesan Cheese Recipe
Serves/Makes: 4
Ingredients:
- 48 small clams
- 1 tablespoon (15 mL) butter
- Juice of 1/2 a lemon
- 1 tablespoon (15 mL) butter
- 1 tablespoon (15 mL) freshly chopped parsley
- 1 tablespoon (15 mL) chopped chives
- 2 garlic cloves, crushed and minced
- 1 onion, finely chopped
- 1 celery stalk, finely chopped
- 3 tomatoes, chopped
- 1/2 cup (125 mL) grated Parmesan cheese
- Salt and pepper, to taste
How to cook Clams wih Parmesan Cheese:
- Remove clams from shells, reserving both, clams and shells.
- Finely chop steamed clams set aside.
- Into a clean casserole, melt remaining 1 tablespoon (15 mL) butter.
- Mix in chopped parsley and chives, minced garlic and chopped onion cook for 3 to 4 minutes, over medium heat.
- Mix in chopped celery cook for 2 to 3 minutes more.
- Delicately mix in chopped tomatoes well season with salt and pepper cook for 4 to 5 minutes, over high heat.
- Mix in reserved chopped clams cook for 2 minutes more.
- Mix in half or grated Parmesan cheese check for seasonings.
- Spoon mixture into reserved shells evenly sprinkle with remaining grated Parmesan cheese.
- Arrange stuffed shells onto a large baking sheet, grated cheese on top.
- Broil for 2 to 3 minutes.
- Serve.
