
Crab and Tomato Crepes with Mornay Sauce Recipe
Ingredients:
- 1 (12-ounce) can or 3/4 pound fresh crab meat
- 2 medium tomatoes, skinned and seeds removed
- 1 green pepper, diced
- 3 shallots, finely chopped
- Juice of 1 lemon
- 1 tablespoon butter
- 1/4 cup cream
- 1 tablespoon chives combined with parsley, finely chopped
- Mornay Sauce (see the recipe below)
- 8 crepes (see the recipe below)
How to cook Crab and Tomato Crepes with Mornay Sauce:
- Clean the crab and set aside. Remove the skin and seeds from the tomatoes. Melt the butter and saute the shallots and green pepper over a moderate heat for about 4 minutes.
- Prepare a Mornay Sauce.
- In a bowl, combine the crab meat, tomatoes, and green pepper. Add the lemon juice, cream, shallots and herbs. Add about 1/2 of the prepared Mornay Sauce.
- Place 2 tablespoons of the mixture in each crepe. Place the crepes in a buttered ovenproof dish and spoon the remainder of the Mornay Sauce over the crepes.
- Bake in a preheated 400°F (200°C) oven for 15 minutes until the sauce is golden brown and bubbling.
- Sprinkle with chives and parsley before serving.

Crepes Ingredients:
- 2/3 cup flour
- 1/2 teaspoon salt
- 2 eggs, beaten
- 1 cup milk
How to cook Crepes:
- Combine flour, salt, and eggs; beat until smooth.
- Gradually add milk, mixing until well blended.
- For each crepe, pour 1/4 cup batter into hot, lightly greased 8-inch skillet or crepe pan, tilting skillet to cover bottom.
- Cook over medium-high heat until lightly browned on both sides, turning once.
Mornay Sauce Recipe
Mornay Sauce Ingredients:
- 1 tablespoon butter
- 1 tablespoon flour
- 1 cup milk
- 3 tablespoons Swiss or Gruyere cheese
- 1 tablespoon grated Parmesan cheese
- 1/2 teaspoon prepared mustard, preferably Dijon type
How to cook Mornay Sauce:
- Melt the butter in a small saucepan.
- Remove from the heat and add the flour, stirring with a wire whip.
- Return to a moderate heat.
- Add the milk gradually, stirring the mixture constantly until the sauce is thickened.
- Add the remaining ingredients, and salt and pepper to taste.

Tips:
Lightly grease and preheat the skillet or crepe pan until a drop of water sizzles when sprinkled on. If the skillet isn’t really hot, crepes may be too thick and stick to the pan.
