
Crab Enchiladas Recipe
Ingredients:
- 3 cups crab meat
- 1 can cream of shrimp soup
- 1/2 cup sour cream
- 1/2 cup Mozzarella cheese, shredded
- 1/2 cup Cheddar or Jack cheese, grated
- 4 large flour tortillas
- 1/4 cup milk
- Cheese, for topping
How to cook Crab Enchiladas:
- Mix soup, sour cream, and 1/2 cup each of the Mozzarella and Jack cheeses all together. Reserve 1/2 cup and set aside.
- Combine the crab meat with the soup, sour cream, and cheese mixture, tossing gently so as not to break up the crab meat too much.
- Spoon onto the tortiallas; fold and roll. Place in a buttered baking dish.
- Mix milk with reserved mixture and pour over top. Sprinkle with Cheddar cheese or whatever topping you prefer.
- Bake at 375°F (190°C) for 30 to 40 minutes.
