
Crab Meat and Spinach Soup Recipe
Ingredients:
- 1/2 pound crab meat, fresh or canned
- 1 1/2 ounces butter
- 1 onion, finely chopped
- 1 to 2 cloves garlic, crushed
- 1 bunch spinach, roughly chopped
- 4 cups chicken stock
- 1/2 cup coconut milk
- Salt and pepper
- Tabasco sauce to taste
- Thickened cream (optional)
How to cook Crab Meat and Spinach Soup:
- Pick over the crab meat, discarding any cartilage.
- Heat butter in saucepan and saute onion and garlic until soft. Add spinach and stir to coat with butter. Cook over a gentle heat until leaves start to wilt.
- Stir in stock and coconut milk and season with salt and pepper. Bring to the boil, reduce heat and simmer for 10 minutes or until spinach is tender.
- Add crab meat and heat through. Add Tabasco sauce to taste and thickened cream, if desired.
- Serves the Crab Meat and Spinach Soup hot.
