
Creole Spicy Catfish Amandine Recipe
Serves/Makes: 6 servings
Ingredients:
- 6 catfish fillets (about 6 ounces each)
- 1/4 cup butter, melted
- 3 tablespoons lemon juice
- 1 1/2 teaspoons Creole Seasoning (store bought or homemade, see the recipe below)
- 1/2 cup sliced almonds
How to cook Creole Spicy Catfish Amandine:
- Combine butter and lemon juice; dip each fillet in butter mixture, and arrange in a 13x9x2 inch baking dish.
- Sprinkle fish with Creole seasoning and almonds.
- Bake at 375°F (190°C) for 25 to 30 minutes or until fish flakes easily when tested with a fork.
Creole Seasoning Ingredients:
- 1 tablespoon sea salt
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1/4 teaspoon dried thyme
- 1/4 teaspoon rubbed sage
- 1 1/2 teaspoons cayenne pepper
- 1 teaspoon white pepper
- 1 1/2 teaspoons black pepper
- 1 teaspoon dry mustard
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 1 teaspoon dried marjoram
- 1/2 teaspoon crushed bay leaves
- 1/4 teaspoon chili powder
