
Cuban Rosti Crab Cakes Recipe
Serves/Makes: Serves 3 as main course or 6 as starter
Ingredients:
- 1/2 pound crab meat, prepared fresh or from can
- 5 potatoes, unpeeled and cooked 10 minutes
- 1 tablespoon capers
- Juice and rind from 1/2 lemon
- Bunch chives, chopped
- 1 tablespoon parsley, cut
- 1 teaspoon cayenne pepper
How to cook Cuban Rosti Crab Cakes:
- Peel the potatoes and grate them. Mix them with all other ingredients and put the mixture in the fridge for 2 hours.
- Form 12 crab-potato cakes and fry these in a layer of hot oil until golden brown, about 3 minutes on each side.
