
Filipino Bangus En Tocho Recipe
Serves/Makes: 4
Ingredients:
- 1 pound milkfish (bangus)*
- 2 garlic cloves, minced
- 2 teaspoons fresh ginger, chopped
- 1 medium onion, sliced
- 1 small tomato, chopped
- 1 tablespoon Oriental black bean sauce
- 1 tablespoon white vinegar
- 3/4 cup water
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 2 tablespoons oil
How to cook Filipino Bangus En Tocho:
- Heat oil in nonstick skillet and brown fish on both sides. Remove the fried fish from pan and drain on paper towels.
- Heat to moderate temperature and add garlic, onions, and ginger. Saute until the onion is soft.
- Add the tomato and cook until soft. Add the bean sauce, vinegar, water, and sugar.
- Simmer for 2 minutes. Add salt to taste.
- Serve the Filipino Bangus En Tocho with hot steamed rice.

*You may substitute Canadian whitefish for the milkfish (bangus), although most Oriental markets carry frozen milkfish.
