
Filipino Fish with White Sauce Recipe
Serves/Makes: 4 – 6
Ingredients:
- 1 whole sea bass, about 2 pounds
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 2 onions, minced
- 1/4 cup cubed red ripe tomatoes
- 3 tablespoons white wine
- 2 cups celery, sliced into 1-inch pieces
- 1 1/2 cups water
- 1/8 cup butter (4 tablespoons or 1/2 stick)
- 2 tablespoons flour
- 1/3 cup milk
- Salt and pepper to taste
How to cook Filipino Fish with White Sauce:
- Preheat oven to 350°F (180°C).
- Clean fish thoroughly. Rub with lemon juice inside and out. Season fish with salt and pepper and put in a baking dish.
- Add onion, tomatoes, white wine, celery and water. Bake at 350°F (180°C) for 45 minutes. Strain the sauce, and keep fish warm.
- To prepare White Sauce: in a large skillet, melt the butter. Remove from the fire. Add flour and strained fish sauce and simmer over low heat until sauce becomes thick. Add milk. Simmer for 2 minutes. Season with salt and pepper to taste. Pour the sauce on the fish.
- Serve the Filipino Fish with White Sauce hot.
