
Filipino Fried Egg Rolls (Lumpia) Recipe
Serves/Makes: 12 lumpia
Ingredients:
- 1/2 pound shrimps, cleaned and chopped fine
- 1/2 pound ground pork
- 1/2 cup chopped water chestnuts
- 1/2 cup green onions, chopped fine
- 1 teaspoon salt
- 1 teaspoon freshly ground pepper
- 1 egg
- 1 tablespoon soy sauce
- 1 package egg roll (lumpia) wrapper – small (sold in Oriental stores)
- 1/2 cup cooking oil for deep frying
How to cook Filipino Fried Egg Rolls (Lumpia):
- Combine pork, shrimp, water chestnuts, green onion, egg and soy sauce.
- Season with salt and pepper.
- Place a level tablespoon of filling on each egg roll wrapper and seal with a few drips of water.
- Deep fry the egg rolls in hot oil until golden brown and drain on paper towel.
- Serve the egg rolls with Sweet-and-Sour Sauce or Spicy Vinegar Dip (combine vinegar, chopped garlic, pinch of salt, and chopped red chili pepper).
