
Filipino Shrimp Afritada (Apritada) Recipe
Ingredients:
- 30 large shrimp (hipon), shelled
- 2 potatoes, diced
- 3 large tomatoes, sliced
- 1 onion, sliced
- 1 clove garlic, minced
- Water
- Salt to taste
- Cooking oil
How to cook Filipino Shrimp Afritada (Apritada):
- Pound the heads of the shrimp, then mash in 1/2 cup water. Save the shrimp juice. Discard the heads.
- Saute garlic, onion, tomatoes, and potatoes
- When potatoes are tender, add shrimp. Season with salt to taste.
- Add the shrimp juice and cook until done.
- Serve the Filipino Shrimp Afritada (Apritada) hot with steamed white rice.
