
Filipino Sinanglay or Ginataan Isda Recipe
Serves/Makes: 4
Ingredients:
- 1 whole mudfish (dalag), about 2 to 2 1/2 pounds
- 1 onion, chopped
- 1 tomato, chopped
- 1 root ginger, sliced in strips
- 1/2 head garlic, minced
- 3 petchay leaves (Chinese cabbage)
- 3 tablespoons vinegar
- Water
- Coconut milk
- Salt to taste
How to cook Filipino Sinanglay or Ginataan Isda:
- Mix the tomatoes, ginger, garlic, onion, and salt to taste. Set aside the mixture.
- Slit the back of the fish and remove all the entrails. Clean well and stuff the mixture.
- Wrap the fish with petchay leaves and place in a casserole.
- Add little water, vinegar, and coconut milk – 3/4 the height of the fish.
- Season with salt to taste, bring to a boil, then simmer. Cook until fish is done.
