
Florida Nutty Snapper Fishsticks Recipe
Serves/Makes: 6 – 8 servings
Ingredients:
- 2 pounds yellowtail snapper* (mutton snapper** or red snapper) fillets, cut into fingers
- 2 cups Macadamia nuts, minced in blender
- 2 eggs
- 2 tablespoons milk
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1/2 cup flour
- 4 to 6 tablespoons butter
- 2 tablespoons oil
- 2 key limes, quartered, to garnish
How to cook Florida Nutty Snapper Fishsticks:
- Pat fish fingers dry with paper towel.
- Combine eggs and milk and whip with a whisk. Add salt and pepper to flour and mound on a sheet of waxed paper. Place nuts in a shallow dish.
- Roll the fish fingers in flour coat. Dip in egg liquid, then into the nuts and place on a cake rack to dry for at least 30 minutes.
- Melt the butter and oil together in a heavy skillet over moderate heat. When butter becomes foamy, add the fish and cook 3 to 5 minutes on each side.
