
French Salmon with Riesling and Chives Recipe
Ingredients:
- 4 salmon steaks, about 6 ounces each and 1-inch thick
- 2 shallots, chopped
- 2 tablespoons thinly sliced chives
- 3/4 cup Riesling wine
- 1 cup heavy cream
- Salt and freshly ground black pepper
- Few drops of lemon juice
How to cook French Salmon with Riesling and Chives:
- Preheat oven to 425°F (220°C). Butter a baking dish large enough to hold the salmon in 1 layer.
- Sprinkle the chopped shallots and 1 teaspoon of the chives on the bottom of the buttered baking dish and set the salmon on top.
- Season with salt and pepper and pour the Riesling over the salmon steaks.
- Butter a piece of aluminum foil or parchment paper and cover the salmon steaks with it. Put in the oven and bake for 15 minutes.
- Transfer the steaks to a plate and cover with foil to keep warm.
- Pour the cooking liquid, along with the shallots and chives, into a saucepan and bring to a boil. Continue to boil, until it is reduced to 1/3 cup.
- Add the cream and simmer over medium heat, whisking occasionally, until thick enough to coat a spoon.
- Stir in the remaining chives and a few drops of lemon juice. Taste and adjust seasonings.
- Drain any liquid from the platter of fish. Spoon the sauce over the fish and serve accompanied by buttered pasta.
