
German Simmered Cod with Vegetables Recipe
Ingredients:
- 6 cod fillets or steaks, about 6-8 ounces each
- Juice of 1 lemon
- 1 cup dry white wine
- 1/2 cup aromatic vinegar
- 2 slices lemon
- 1/2 teaspoon mustard seed
- 2 peppercorns
- 1 bay leaf
- 4 juniper berries
- 1 dash each of marjoram, thyme, and tarragon
- 2 medium carrots
- 2 medium onions
- 1 leek
- 1 bunch dill
- Salt to taste
How to cook German Simmered Cod with Vegetables:
- Rub the cod fillets with lemon juice and salt.
- Put water in a pan, add wine, aromatic vinegar, lemon slices, and spices and bring to a boil.
- Add the cod fillets and let simmer for 20 – 30 minutes.
- Cut onion into slices, peel carrots, and cut the leek into rings. Chop all three and sautee in olive oil for about 3 minutes. Then add a little water and boil for another 5 minutes.
- Place vegetables on a pre-heated plate. Remove the simmered cod from pot and place on top of vegetables. Garnish with lemon wedges and dill.
- Serve with mustard or horseradish sauce.
