
Grilled Salmon with Corn Salsa Recipe
Ingredients:
- 6-8 salmon steaks, about 8 ounces each
- 1 cup fresh or canned yellow corn kernels
- 1/2 cup green pepper, finely chopped
- 1/2 cup tomato, finely chopped
- 1/2 cup onion, finely chopped
- 2 tablespoons garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons balsamic or other red wine vinegar
- 1/4 cup chopped fresh Italian parsley
- Salt and freshly ground pepper
How to cook Grilled Salmon with Corn Salsa:
- Mix all the salsa ingredients together in a small mixing bowl. Set aside for 1 hour or more.
- Place the salmon steaks on well-oiled grill over hot coals.
- Grill 10 minutes per inch of thickness measured at thickest part or until fish just flakes when tested with a fork.
- Turn halfway through cooking.
- Serve the grilled salmon steaks with corn salsa.
