
Indian Simmered Cod with Okra Recipe
Ingredients:
- 1 pound cod fillets, cut into chunks
- 8 ounces okra, chopped
- 2 tablespoon ghee*
- 2 tablespoon mustard oil
- 4 cardamom pods
- 1 teaspoon sugar
- 8 ounces onions, sliced
- 2/3 cup natural (plain) yogurt**
- 4 dried red chilies, seeded and ground
- 1 inch ginger root, chopped
- Salt to taste
How to cook Indian Simmered Cod with Okra:
- Heat the ghee and oil and fry the cardamom pods for 1 minute. Add the sugar and stir until it turns brown. Add the onions and fry until browned.
- Beat the yogurt to a smooth paste and add to the pan with the cod, okra, chilies, ginger and salt.
- Cover and simmer for 10 minutes until the cod is tender.
- Serve the simmered cod hot or cold with steamed rice.
