
Italian Cod and Tomato Stew with Orzo Recipe
Ingredients:
- 1 1/2 pounds cod fillets, or other firm white-fleshed fish, at least 1-inch thick
- 2 to 3 tablespoons olive oil
- 1 cup coarsely chopped green peppers
- 1 1/4 cups coarsely chopped onions
- 4 large garlic cloves, minced
- 2 cans (14.5-ounces each) whole tomatoes, broken apart, with juices
- Salt and pepper, to taste
- 4 tablespoons chopped fresh parsley
How to cook Italian Cod and Tomato Stew with Orzo:
- Heat a large sauté pan over medium-high heat. Add the green peppers and onions. Sauté until softened, about 5 minutes. Add the garlic and cook 1 more minute. Add the tomatoes, salt and pepper.
- Cover and cook until the tomatoes cook down slightly, about 5 minutes.
- Cut the fish fillets first down the center, then into 3 or 4-inch pieces. Place on top of the tomatoes.
- Sprinkle with parsley, salt and pepper. Cover and cook over medium-low heat until the fish is done, about 5 minutes.
- Serve the Italian Cod and Tomato Stew immediately over Buttery Toasted Orzo or rice or couscous.
Buttery Toasted Orzo Recipe
Buttery Toasted Orzo Ingredients:
- 2 to 4 tablespoons butter
- 1 1/2 cups orzo
- 1 can (14.5 ounces) low-salt chicken broth, plus enough water to make 2 1/2 cups
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped
How to cook Buttery Toasted Orzo:
- Melt the butter in a medium saucepan over medium-high heat. Add the orzo and stir well to coat the grains with the butter. Cook until a nutty-brown color, stirring constantly to prevent burning.
- Add the broth and water; bring to a boil over high heat. Cover; reduce heat to medium-low and cook for about 15 minutes or until all the liquid is absorbed. Season with salt, pepper and parsley. Stir well. Serve immediately.

The Buttery Toasted Orzo recipe uses lots of butter and has a nutty taste. If you prefer not using as much butter, you can cut it way back and it will still be excellent.
