
Italian Skewered Shrimp Recipe
Ingredients:
- 20 raw jumbo shrimps, shelled and deveined
- Wafer thin slices Canadian bacon or Prosciutto
- 3 tablespoons salad oil
- 1 tablespoon Brandy
- 1/2 cup light cream (or dry white wine)
- 1/3 cup beef broth (or consomme*)
- 2 teaspoons reconstituted lemon juice
- 2 teaspoons minced parsley
- 1/2 teaspoon Worcestershire sauce
- Dash cayenne pepper
- Salt to taste
How to cook Italian Skewered Shrimp:
- Shell and devein shrimp leaving tails intact. Rinse and pat dry on paper towels.
- On each of 4 skewers thread 5 shrimp alternately with small squares bacon or ham, piercing shrimp so flat sides lie flat in pan.
- Brown lightly in hot salad oil on each side. Sprinkle with Brandy; add rest of ingredients.
- Cover tightly and simmer gently about 10 minutes.
- Remove to warm plates. Pour sauce over shrimp.
- Serve the Italian Skewered Shrimp with Risotto rice.
