
Jamaican Fish Stew Recipe
Serves/Makes: 6
Ingredients:
- 2 pounds mahi-mahi (dolphin) fillets, cut into 1 inch cubes
- 1 green pepper, diced 2 onions, sliced
- 1 hot pepper, seeds removed, diced
- 2 tablespoons butter
- Water or fish broth
- 1 tablespoons flour
- Salt to taste
- 1/4 teaspoon ground black pepper
- Oil for frying
How to cook Jamaican Fish Stew:
- Fry the mahi-mahi (dolphin) cubes lightly and set aside.
- Make a brown sauce by frying onion in butter and adding flour slowly until brown.
- Add water or fish broth, peppers, salt and green pepper. Cook to thicken just a little.
- Lower the heat a bit more.
- Place the fried mahi-mahi cubes into the brown sauce. Cover with some of the sauce.
- Cover and allow to simmer for 15 minutes, turning the fish at least once and adding more water if necessary to keep it from dying out.
