
Japanese Mixed Grill in Foil Recipe
Serves/Makes: 4
Ingredients:
- 1 pound sea bass fillet, or other white fish
- 1/2 pound shrimp
- 1/2 pound chicken
- 8 large shiitake mushrooms, or matsutake*
- Butter
- 1 large lemon, thinly sliced
- 2 tablespoons sake
How to cook:
- Cut fish into 4 equal pieces.
- Boil shrimp until pink. Drain and cool.
- Cut chicken into pieces and score heavily to insure that chicken cooks in same time as fish.
- Cut mushrooms into 4 segments.
- Butter the center of a square of aluminum foil, place fish, shrimp, chicken and mushrooms top with butter and lemon slice. Sprinkle over this 1/2 tablespoon of sake.
- Fold up packet and crimp edges.
- Place in hot coals and grill for 10 minutes or bake in 475°F oven for 20 minutes.
- Serve with Japanese soy sauce if desired.
