
Korean Chirashi Recipe
Serves/Makes: 3 – 4
Ingredients:
- 1/3 pound fresh tuna or salmon
- 1 bowl cooked rice
- 5 sesame leaves, thin sliced
- 2 lettuce leaves, thin sliced
- 1/4 cucumber, thin sliced
- 1/4 carrot, thin sliced
- 1 green pepper
- 1 clove garlic, sliced
- 1 tablespoon red pepper paste
- 1/2 tablespoon vinegar
- 1/2 tablespoon brown sugar
- 1 teaspoon sesame oil
- 1 tablespoon fried sesame seeds
How to cook Korean Chirashi:
- On the top of rice, place thin sliced lettuce, sesame leaves, carrot, garlic and green pepper nicely.
- Slice the tuna or salmon fillet on the diagonal into thin strips about 1/2 inch wide and 1 1/2 inches long and add on the top.
- Make the sauce by mixing red pepper paste, sesame oil, sugar, and vinegar.
- Serve the sauce in a small sauce dish or put it on the top of fish.
- Add sesame seeds on the top.

The Korean name for the Chirashi is Hyedupbap. Hyedupbap means rice covered with sashimi in Korean. It has fresh vegetables, fresh sashimi, sweet and spicy sauce. It is very easy to make. All you need to do is thin-slicing all the ingredients.
