
Korean Grilled Spiced Fish Recipe
Serves/Makes: 4
Ingredients:
- 1 whole red snapper (or other saltwater fish such as porgy, flounder, mackerel, and etc.), about 1 pound, gills removed
- 1 teaspoon salt
- 2 tablespoons corn oil
- 1 tablespoon soy sauce
- 1/2 teaspoon hot red chili powder
- 1 clove garlic, chopped fine
- 1 pinch of black pepper
- 1 teaspoon toasted sesame seeds
- 1 scallion, chopped finely
How to cook Korean Grilled Spiced Fish:
- Score the fish 4 times diagonally on each side. Rub the sides with salt and let stand for 15 minutes.
- Prepare the marinating sauce. Mix together the oil, soy sauce, chili powder, garlic, pepper, sesame seeds and scallion. Mix briskly and rub half of the sauce onto one side of the fish. Set aside for 15 minutes.
- Broil over charcoal or in a gas or electric broiler for 5 minutes on each side of the fish. Remove, turn, and add the balance of the marinade to the other side of the fish. Return to the broiler for 2 more minutes.
- Serve the Korean Grilled Spiced Fish warm with steamed rice and an assortment of side dishes.
