
Lasagna with Canned Salmon Recipe
Ingredients:
- 1 (16-ounce) can salmon, drained and flaked
- 1 pound lasagna noodles
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1/4 cup cooking oil
- 1 (28-ounce) can plum tomatoes
- 1 (8-ounce) can tomato sauce
- 1 (6-ounce) can tomato paste
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon sweet basil
- 1/2 teaspoon oregano
- 2 tablespoons chopped parsley
- 8 ounces Mozzarella cheese, sliced
- 1 pound Ricotta cheese
- 1 cup grated Parmesan cheese
How to cook Lasagna with Canned Salmon:
- To prevent cooked, drained lasagna noodles from sticking together, allow to remain in warm water until needed.
- Preheat oven to 350°F (180°C). Use a 9 x 13-inch baking dish.
- Saute onion and garlic in oil until transparent. Do not brown. Add tomatoes, tomato sauce, tomato paste, seasonings and parsley. Simmer over low heat for 30 minutes.
- Meanwhile, cook lasagna noodles in boiling salted water for 10 to 12 minutes. Drain and place in warm water.
- Put a thin layer of sauce in bottom of baking dish and arrange a layer of lasagna noodles on the sauce. On top of the lasagna noodles, arrange a few slices of Mozzarella, a few spoonfuls of Ricotta and some of the salmon, using about 1/3 each. Sprinkle with 1/3 Parmesan cheese. Spoon over about 1/4 of the sauce and cover with lasagna noodles. Repeat layers twice more, ending with lasagna noodles and remaining sauce.
- Bake 30 minutes.
