
Lobster Tacos Recipe
Serves/Makes: 6
Ingredients:
- 2 pounds fresh lobster, cooked and meat removed from
- 6 yellow corn tortillas, 6-inch diameter
- Oil for frying
- 6 leaves of green leaf lettuce
- Cucumber relishes
- 1 avocado, skinned, seeded, mashed
- Sweet peas, blanched
- 1 bunch red radishes, sliced thin
- 1 bunch cilantro, stems removed, chopped roughly
- 2 fresh limes
- Extra virgin olive oil (for sprinkling)
How to cook Lobster Tacos:
- Fry tortillas quickly in hot oil until soft and pliable.
- Lay out tortillas and build each taco by layering the ingredients in this order: a piece of lettuce, 4 tablespoons lobster meat, 2 tablespoons cucumber relish, a dab of mashed avocado, 1 tablespoon sweet peas, a few slices of radish and a pinch of chopped cilantro.
- Finish each taco by squeezing with fresh lime juice, then drizzle with 1 teaspoon of olive oil.
- Fold tortillas in half and serve immediately.
