
Lumpiang Ubod (Heart of Palm Spring Rolls) Recipe
Ingredients:
- 12 Lumpia Wrappers, Oriental food store bought or homemade (see the recipe below)
- 1/2 cup cooked shrimp, shelled, deveined, and chopped
- 2 tablespoons cooking oil for frying
- 2 cloves garlic, crushed
- 1 small onion, chopped
- 1/4 cup cooked ham, chopped
- 1/4 cup boiled pork, diced
- 1/2 cup cooked chick peas
- 1 cup snap beans or habituelas, cut in diagonal strips
- 1/2 cup Ubod in match-like strips, (Heart of Palm)
- 2 cups cabbage, finely shredded
- 2 teaspoons salt
- 24 pieces lettuce leaves or spring onions
- 1 cup carrots, julienned
- Ground peanuts for topping, optional
- Filipino Garlic Sauce for dipping (see the recipe below)
How to cook Lumpiang Ubod (Heart of Palm Spring Rolls):
- Brown garlic in hot cooking oil, add onions, cook slowly until soft. Add pork, ham, shrimps, and chickpeas. Simmer for 5 minutes.
- In another saucepan combine carrots, string beans and ubod; cook, covered, until vegetables are halfway done. Drain and season; let cool.
- Wrap mixture in homemade wrappers lined with lettuce leaves or spring onions.
- Serve the Lumpiang Ubod with Garlic Sauce. May be topped with ground peanuts and half-fried crushed garlic.
Lumpia Wrappers Recipe
Lumpia Wrappers Ingredients:
- 2 large eggs
- 2 cups flour
- 1/8 teaspoon salt
- 2 cups water
- 2 tablespoons oil
How to cook Lumpia Wrappers:
- Combine eggs, flour, salt and water in a bowl. Stir until a smooth batter is formed.
- Heat an 8-inch skillet, preferably nonstick, over moderate heat. Lightly oil the pan with a piece of paper towel dipped in oil, or use a spray.
- Using a ladle, pour in just enough batter to cover the bottom of the pan, about 2 tablespoons.
- Swirl the pan quickly to make a thin coating. Cook for a few seconds until it begins to curl away from edges of the pan. Turn over and cook the other side for a few seconds.
- Remove the wrapper and transfer to a lightly floured piece of wax paper. Continue this process until all of the batter is used up. Place a piece of wax paper between each wrapper.
- You can freeze wrappers for up to one month.
Filipino Garlic Sauce Recipe
Filipino Garlic Sauce Ingredients:
- 1/4 cup brown sugar
- 1/4 cup soy sauce
- 1 1/2 cups chicken stock
- 2 tablespoons cornstarch
- 2 garlic cloves, minced
- 4 tablespoons water
How to cook Filipino Garlic Sauce:
- Combine the sugar, soy sauce and stock. Cook for 2 minutes.
- Dissolve the cornstarch in the water, and add to the pan.
- Cook, stirring constantly, over high heat, until the sauce thickens.
- Serve the sauce hot, sprinkled with minced garlic. Serve with Lumpia or Ukoy.
Tip:
You may substitute bamboo shoots for the Heart of Palm.
