
Maine Coast Clam Fritters Recipe
Ingredients:
- About 30 medium-sized hard-shell clams, scrubbed, shucked and very finely chopped
- 2 large eggs
- 1 cup flour
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Fat or oil for deep frying
How to cook Maine Coast Clam Fritters:
- Make the batter by beating the eggs and adding the flour gradually. Add the milk slowly, then the salt and pepper.
- Add the chopped clams and stir all together.
- Heat the fat or oil until it reaches 375°F (190°C).
- Drop the clam mixture by spoonfuls into the fat. When the fritters are brown on one side – about 1 minute – turn them and brown the reverse side.
