
Maltese Grilled Garfish Recipe
Ingredients:
- 3 pounds whole garfish
- 1 lemon, quartered
- 1/2 cup olive oil
- Juice of 1 lemon
- 2 cloves garlic, crushed
- 2 tablespoons finely chopped flat-leaf parsley
- Salt and freshly ground black pepper
- Lemon wedges, to serve
How to cook Maltese Grilled Garfish:
- Scale and clean the fish if necessary. Rub the cavities with lemon quarters to flavour the flesh. Pierce the flesh just about the tails and the beaks through this to form rings (if you try to pierce the flesh with the beaks, they could break).
- Beat the oil with the lemon juice, garlic, parsley, and salt and pepper to taste in a bowl. Brush the fish with the oil mixture and cook slowly on the barbecue grid for about 15 minutes, turning frequently and brushing with the mixture.
- Alternatively cook under a moderate grill.
- Serve the Maltese Grilled Garfish hot with lemon wedges.
