
Maryland Baked Bluefish with Caper Stuffing Recipe
Serves/Makes: 10 – 12
Ingredients:
- 1 whole bluefish, about 4 1/2 to 5 pounds, dressed
- Salt and freshly ground black pepper
- 1 tablespoon butter, melted
- 1/2 cup boiling water
- 1 large onion slice
- 2 cups soft bread crumbs
- 1 tablespoon butter, melted
- 2 tablespoons capers
- 1 small dill pickle, minced
- 1 tablespoon fresh parsley, minced
- 1 small onion slice, minced
- Pinch of seafood seasoning, optional
- Salt and freshly ground black pepper, to taste
- 1/2 cup boiling water
How to cook Maryland Baked Bluefish with Caper Stuffing:
- Preheat oven to 350°F (180°C).
- Mix all stuffing ingredients, except water, in a medium-size bowl. Slowly add water and blend throughly into bread crumb mixture.
- Dry bluefish throughly inside and out. Lightly sprinkle inside of fish with salt and pepper.
- Stuff bluefish lightly with bread crumb mixture and close with skewers. Brush fish with melted butter and place on its side in a baking dish.
- Pour 1/2 cup boiling water into dish and add onion slice. Bake bluefish for approximately 50 minutes or until fish flakes easily with a fork. Remove fish to a prewarmed platter and take out skewers. Serve the Maryland Baked Bluefish with Caper Stuffing immediately.
