
Maryland Baked Whole Rockfish (Striped Bass) RecipeServes/Makes: 6 – 8
Ingredients:
- 1 whole rockfish (striped bass), about 3 to 3 1/2 pounds, dressed
- 1 tablespoon butter
- Salt and freshly ground black pepper
- 2 tablespoons butter
- 3 slices bacon
- 2 to 3 lemons, cut into wedges, to garnish
How to cook Maryland Baked Whole Rockfish (Striped Bass):
- Preheat oven to 325°F (165°C).
- Butter a baking dish with 1 tablespoon of butter, large enough to hold rockfish with basting juices. Dry rockfish thoroughly inside and out.
- Sprinkle inside of fish with salt and pepper, and dot with 2 tablespoons of butter. Place fish on its side in baking dish. Lay strips of bacon across top.
- Bake for approximately 10 minutes per pound, until fish flakes easily with a fork. Baste 2 or 3 times during baking.
- Remove rockfish to a prewarmed platter and spoon cooking juices over top. Serve the Maryland Baked Whole Rockfish immediately with lemon wedges.
- Small, whole boiled potatoes are traditionally served with the baked rockfish.
