
Maryland Herbed Clam Fritters Recipe
Serves/Makes: About 24 (2-inch) fritters
Ingredients:
- 2 dozen shucked Chesapeake Bay soft shell clams with liquor
- 2 1/2 cups flour
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons baking powder
- 1/4 cup (1/2 stick) butter
- 3 eggs, separated
- 1 cup beer
- 1 tablespoon parsley
- 1/8 teaspoon onion powder
- 1/8 teaspoon garlic powder
- 1/8 teaspoon pepper
- Oil, for deep frying
How to cook Maryland Herbed Clam Fritters:
- Put flour, salt, and baking powder in a large bowl. Melt butter and add to dry ingredients.
- Lightly beat egg yolks and mix in well. Gradually add beer and allow to stand in a warm place for 1 hour.
- Add clams, clam liquor, and remaining seasonings. (If not proper consistency, add more flour or beer.) Beat egg whites until stiff and fold in.
- Drop batter by tablespoonful into hot 375°F (190°C) oil. Cook until golden brown.
