
Maryland Oyster Pie Recipe
Ingredients:
- 24 large shucked oysters, with liquor
- 1 large onion, thinly sliced
- 4 small potatoes, peeled and thinly sliced
- 1 bay leaf
- 1/2 teaspoon salt
- Generous sprinkling of freshly ground black pepper
- Pinch of cayenne pepper
- 2 tablespoons oyster liquor
- 1/2 cup warm half-and-half
- 1 Flaky Pie Crust (see the recipe below)
How to cook Maryland Oyster Pie:
- Prepare the Flaky Pie Crust for pie and set aside.
- Preheat oven to 450°F (230°C).
- Arrange alternate layers of oysters, onion slices, and potatoes in an 8 to 9-inch pie plate. Place bay leaf in center of pie and season pie with salt, pepper, and cayenne.
- Measure out 2 tablespoons of oyster liquid, and reserve remaining liquor for another use.
- Mix oyster liquid with half-and-half and pour over top of oyster filling. Cover filling with pie crust dough and crimp edges around pie plate. Prick top of dough several times with a fork.
- Bake for approximately 15 minutes until crust of pie is golden brown.
- Serve the Maryland Oyster Pie immediately.
Flaky Pie Crust Recipe
Flaky Pie Crust Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 8 tablespoons butter, softened
- 3 tablespoons cold water
- Sprinkling of flour
How to cook Flaky Pie Crust:
- Sift flour and salt on a board. Cut butter into flour with a fork or pastry blender, and mix well.
- Gradually add just enough cold water to hold the dough together. Form dough into a ball.
- Lightly flour board and roll dough out to 1/8 to 1/4-inch thickness.
- Cut dough for 8 to 9-inch pie about 1 inch wider all around and use this and any extra dough to fold under and press around the edges when pie is ready for baking.
