
Mexican Rice and Shrimp Recipe
Ingredients:
- 3 cups cooked, deveined shrimp
- 1 cup white rice
- 4 tablespoons shortening
- 2 tablespoons flour
- 3 tablespoons diced onion
- 1/4 teaspoon paprika
- 4 to 5 stewed tomatoes
- 1/2 cup chopped celery
- 1 teaspoon salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon black pepper
How to cook Mexican Rice and Shrimp:
- Cook rice until tender.
- In a skillet, add shortening and brown flour. Saute onion and celery when flour is brown. Then add seasonings. Add tomatoes, blend well.
- Add rice next, cover and simmer for 15 minutes. Then add shrimp and cook over medium heat for 10 to 15 minutes until shrimp is fully heated.
